panna cotta and peaches recipe

SERVES : 4 TO 6 (SMALL PORTIONS)

Ingredients : 
- 1½ tablespoons water
- 1 teaspoon unflavored gelatin
- 1 cup heavy cream
- ¼ cup sugar
- ½ teaspoon vanilla extract
- 1 peach, pitted and finely sliced

Preparation Method :
1) In a large bowl, combine the water and gelatin, stir once, and let sit for 4 minutes.

2) While the water and gelatin are coming together, in a microwave-safe bowl, microwave the heavy cream and sugar for 30 seconds on HIGH. Remove from the microwave and stir. Repeat, microwaving for 30 seconds and stirring, for a total of 1½ minutes, or three intervals of heating.

3) Remove the bowl from the microwave and stir in the vanilla, then pour the warm cream mixture over the gelatin mixture. Stir and make sure that all the gelatin and sugar have dissolved, then pour into four to six little bowls or cups. Cover with plastic wrap and let set in the refrigerator for 2 hours (or overnight).

4) When ready to serve, remove the plastic wrap and place little peach slices on top of the panna cotta.

NOTES :
You can top this dessert with any fruit you desire. Soft fruit works best; think berries or bananas. Unflavored gelatin is found in the baking aisle or next to the powdered gelatin dessert mixes in most grocery stores.
