MEDITERRANEAN DIP RECIPE

MAKES ABOUT: 2 CUPS DIP; SERVES 10 TO 15 (DOUBLES EASILY)

Ingredients : 
- 1 cup feta cheese, crumbled
- 1 large or 2 small beefsteak tomatoes, chopped
- 1½ tablespoons extra-virgin olive oi
- 3 scallions, chopped
- 1 teaspoon Mediterranean- spiced sea salt, store-bought (see notes) or homemade.

Preparation Method :
1) Sprinkle the cheese onto a plate with a lip or in a shallow bowl or serving dish. Top with the chopped tomato and drizzle with the olive oil.

2) Sprinkle with the scallions and then with the Mediterranean spiced sea salt. Serve with a spoon and pita chips, tortilla chips, or even as a bruschetta topping on bread.

NOTES:
McCormick makes the blend of Mediterranean spiced sea salt that I use, but I’ve also used other blends—you want it to contain oregano and thyme, among other flavorings. This dip is also great if you want to make it ahead and let it sit in the refrigerator.
