light and tangy chicken salad recipe

makes: 4 servings (¾ cup each)

Preparation time : 15 minutes 

Ingredients : 
- 6 tablespoons light mayonnaise
- ¼ cup chopped mango chutney
- 2 cups diced cooked chicken breast
- ½ cup halved seedless red grapes
- ½ cup finely chopped celery
- 2 tablespoons finely chopped red onion
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Leaf lettuce (optional)
- 2 tablespoons sliced almonds, toasted

Preparation Method :
In a medium bowl combine mayonnaise and mango chutney. Add chicken, grapes, celery, and red onion. Season with the salt and pepper. To serve, if desired, line two serving plates with lettuce and spoon chicken mixture over lettuce. Sprinkle chicken salad with almonds.
