honey biscuits recipe

MAKES : 6 BISCUITS

Ingredients : 
- 2 cups all-purpose flour, plus 2 tablespoons for dusting
- 1 tablespoon baking powder
- 1 teaspoon salt
- 4 tablespoons cold unsalted butter, cut into pieces, plus 1 tablespoon, melted, for topping
- ¾ cup buttermilk
- 2 tablespoons honey

Preparation Method :
1) Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat and set aside.

2) In a food processor, combine the flour, baking powder, and salt, process for 1 second, then add the cold butter pieces and process for 5 seconds, or until the butter is pea size and no larger chunks remain. Alternatively, if you don’t have a food processor, you could cut the butter into the flour mixture.

3) Pour the flour mixture into a bowl, then pour in the buttermilk and honey. Stir with a wooden spoon and then knead with your hands for 30 seconds (the ingredients should combine to form a doughy mass, but don’t overknead the dough or else it will result in dense biscuits). It will seem as if there is not enough liquid, but there is (if the dough is really not coming together, you can add a teaspoon or two more of buttermilk; alternatively, if the dough is too wet, you can add a teaspoon or two of flour).

4) Transfer the dough to a floured surface and, using your hands, flatten it into a ½-inch disk.

5) With a biscuit cutter, cut out six biscuits and place them on the prepared baking sheet. Brush the tablespoon of melted butter onto the biscuits. Bake for 18 to 20 minutes, or until golden brown. Remove from the oven, allow to cool for a few minutes, and serve and enjoy.

NOTES :
To keep the butter cold, you could put it in the freezer for 5 minutes before handling it. I like to serve these biscuits with some butter and honey, or with some thinly sliced ham and make them into little biscuit sandwiches.
