goat cheese and prosciutto panini recipe

makes: 4 servings (1 sandwich each)

Ingredients : 
- 1 12-ounce loaf whole grain Italian bread
- Nonstick cooking spray
- 2 ounces goat cheese (chèvre), crumbled
- ½ cup fresh basil leaves
- 2 medium tomatoes, sliced
- 2 ounces thinly sliced prosciutto
- 2 cups arugula leaves
- 1 tablespoon balsamic vinegar (optional)
- Grapes (optional)

Preparation Method :
1) Cut the bread in half lengthwise. Hollow out top and bottom halves of bread, leaving a ½-inch-thick shell. Reserve removed bread for another use. (There should be about 4 ounces of bread removed.)

2) Lightly coat outsides of the bread halves with cooking spray. Sprinkle goat cheese over the cut side of the bread bottom. Top evenly with the basil, tomatoes, prosciutto, and arugula. If desired, drizzle with balsamic vinegar. Cover with loaf top.

3) Coat a large nonstick skillet with cooking spray; preheat over medium heat. Place loaf in skillet. Place another skillet on top of the loaf, pressing gently to flatten loaf slightly. Cook for 2½ minutes on one side; turn and cook for 2 to 2½ minutes more or until bread is beginning to brown.

4) Remove from skillet. Let stand on cutting board for 5 minutes. Use a serrated knife to slice loaf into four equal sandwiches. Serve sandwiches warm or at room temperature. If desired, serve with grapes.
