fruit and nut quinoa recipe

makes: 4 servings (¾ cup quinoa mixture, ½ cup berries, and 1 teaspoon honey each)

prep: 10 minutes     cook: 15 minutes     stand: 5 minutes

Ingredients : 
- 1 cup quinoa, rinsed and well drained
- 1 cup fat-free milk
- 1 cup water
- ½ teaspoon ground cinnamon
- Dash salt
- ½ cup chopped pecans, toasted
- 1 cup fresh blackberries
- 1 cup fresh raspberries
- 4 teaspoons honey

Preparation Method :
1) In a medium saucepan stir together quinoa, milk, the water, cinnamon, and salt. Bring to boiling over medium-high heat; reduce heat. Simmer, covered, about 15 minutes or until most of the liquid is absorbed. Remove from heat; let stand, covered, for 5 minutes.

2) Stir in pecans. Top each serving evenly with fresh berries. Drizzle each serving with 1 teaspoon honey.
