crusted pork chops & green beans recipe

Serves : servings 

Ingredients : 
- 2 tablespoons extra-virgin olive oil
- 1½ pounds pork chops (4 pork chops)
- 2 teaspoons Dijon mustard
- ¼ cup Italian-style panko bread crumbs (see notes)
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 (16-ounce) bag frozen French-style green beans

Preparation Method :
1) In a large skillet, heat the olive oil over high heat for 2 minutes.

2) Meanwhile, pat the pork chops dry with a paper towel and set on a plate. Spread the chops with about ½ teaspoon of mustard per side, then sprinkle about 1½ teaspoons of bread crumbs per side, pressing the crumbs into the mustard so that they stick. Place the chops in the skillet and sprinkle with salt and pepper.

3) Cook the pork chops for 5 minutes per side, only flipping once so that a nice crust forms on each side. After cooking for 10 minutes (see notes), turn off the heat and let the chops sit in the pan for 5 minutes; this will keep them nice and juicy while you’re heating your green beans.

4) Heat the green beans according to the package instructions.

5) To serve, place one crispy, crusted pork chop on each plate alongside a quarter of the green beans and enjoy.

NOTES :
You could substitute Italian-style bread crumbs for the panko bread crumbs, but while it still tastes delicious, it doesn’t have quite the same crispy crust that forms when you use panko. Panko can be found right next to regular bread crumbs in major grocery stores. The internal temperature for pork chop doneness is 145° to 160°F.
