coconut chocolate bars recipe

MAKES : 16 BARS

Ingredients : 
- 3 tablespoons unsalted butter, at room temperature, cut into tablespoon-size pieces, plus ½ teaspoon for baking pan
- 2 cups sweetened shredded coconut
- 1 cup heavy cream
- 1 cup semisweet chocolate chips

Preparation Method :
1) Preheat the oven to 350°F. Grease an 8-inch square baking pan with the ½ teaspoon of butter and set aside.

2) In a food processor, process the 3 tablespoons of butter and the coconut on high speed for 1 minute. Pour into the prepared baking pan and press down to form a crust on the bottom. Bake for 18 to 20 minutes, or until the edges start to brown.

3) Remove from the oven and set aside.

4) In a small pot, bring the cream to a boil, 5 minutes. Remove from the heat and pour in the chocolate chips. With a spatula, stir well until combined, 2 minutes, then pour the mixture over the coconut crust. Allow to cool in the refrigerator for an hour (or overnight) until set. When ready to serve, cut into bars and enjoy.
