cheesy chicken broccoli cadderole recipe

Serves4 (DOUBLES EASILY)

Ingredients : 
- 1½ pounds chicken breast (3 chicken breasts), cut into 1-inch cubes
- 1 (12-ounce) package steam-in-bag broccoli florets
- ⅔ cup light mayonnaise
- 2 cups finely shredded sharp cheddar cheese, divided
- 1 teaspoon salt
- 1½ cups croutons, butter and garlic flavor

Preparation Method :
1) Preheat the oven to 350°F. Spray a baking dish (I like to use a 9-inch pie dish) with cooking spray.

2) Bring a medium pot of water to a boil, add the cubed chicken, and boil for 10 minutes.

3) While the chicken is cooking, steam the broccoli in the microwave according to the package instructions.

4) In a bowl, combine the mayonnaise and 1 cup of the cheese, and the salt, then stir in the broccoli.

5) When the chicken is done boiling, use a slotted spoon or drain the water and transfer the chicken to the broccoli mixture. Stir a few times, then spoon into the prepared baking dish. Sprinkle the remaining cup of cheese on top and then arrange the croutons evenly atop the chicken mixture. Bake for 15 to 20 minutes, or until the top layer of cheese has melted. Remove from the oven and serve.

NOTES :
This dish reheats well, so it’s perfect for leftover lunches. Try serving this casserole with a little bit of sriracha sauce on top.
