carrots with miso orange butter recipe

Serves : servings 

Ingredients : 
- 1½ pounds thin carrots, scrubbed
- 4 teaspoons neutral oil, such as safflower
- Kosher salt
- 2 tablespoons unsalted butter, at room temperature
- 1 tablespoon gluten-free white miso
- ¾ teaspoon finely grated orange zest

Preparation Method :
1) Preheat the oven to 425°F. On a rimmed baking sheet, toss the carrots with the oil. Season lightly with salt. Roast the carrots until they are tender and browned in spots, flipping them over halfway through, 30 to 35 minutes. 

2) Meanwhile, stir together the butter, miso, and orange zest. Top the hot carrots with the miso butter before serving.
