Brownie Bites Recipe

MAKES : 24 MINI BROWNIES

Ingredients : 
- 10 ounces semisweet baking chocolate or 1½ cups semisweet chocolate chips; (see notes)
- ½ cup (1 stick; 4 ounces) unsalted butter
- ¾ cup sugar
- 2 large eggs
- 1 cup all-purpose flour

Preparation Method :
1) Preheat the oven to 350°F. Spray a 24-cup mini muffin pan with cooking spray (see notes).

2) In a microwave-safe bowl, microwave the chocolate and butter for 30 seconds on HIGH. Then remove from the microwave and stir. Repeat, microwaving for 30 seconds and stirring, until the chocolate mixture is smooth and creamy (mine usually takes 1½ minutes, or three intervals of heating).

3) Carefully stir in the sugar with a spoon (no need to use a mixer).

4) When the sugar is incorporated, add the eggs and stir until combined, then mix in the flour and stir until combined. No big lumps should remain.

5) Using a tablespoon-size cookie scoop or spoon, fill each muffin cup with a heaping tablespoon of brownie batter. Bake for 14 minutes.

6) Remove from the oven and allow to cool for at least 30 minutes, then gently remove the brownie bites from the muffin pan by running a sharp knife tip around the edges to loosen any parts that may have stuck, and serve.

NOTES :
I have found the best results with using a high-quality chocolate, such as Ghirardelli brand chocolate chips or Baker’s brand baking squares. If you don’t have a mini muffin pan, you could bake the batter in an 8-inch square baking pan for 40 minutes at 350°F and then cut them into brownies.
