breakfast pudding with chia, coconut, and cacao nibs recipe

Serves : servings 

Ingredients : 
- 1 cup short-grain brown rice
- 1½ cups whole milk, plus more for serving if desired
- 1 to 2 tablespoons maple syrup
- 2 tablespoons chia seeds
- 2 small bananas, sliced, for serving
- Unsweetened coconut flakes, toasted, for serving
- Cacao nibs, for serving

Preparation Method :
1) In a medium saucepan, bring the rice and 2¼ cups of water to a boil. Reduce the heat to maintain a low simmer, cover partially, and cook until the rice is tender and the water has been absorbed, about 30 minutes. 

2) Add the milk and bring to a simmer. Add the maple syrup and the chia seeds, and cook until the mixture is thick and creamy, about 2 minutes. (The pudding will continue to thicken as it sits.) Top it with the bananas, coconut, cacao nibs, and more milk if you like.
