beef stroganoff recipe

Serves : servings 

Ingredients : 
- ½ pound egg noodles
- 1 tablespoon extra-virgin olive oil
- 1 pound top sirloin steak, cut into strips
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1¾ cups beef stock
- ½ cup sour cream

Preparation Method :
1) Bring a pot of water to a boil and cook the egg noodles according to the package instructions.

2) In a large skillet (big enough to hold beef and stock), heat the olive oil over high heat for 2 minutes, then add the beef strips and sprinkle with salt and pepper. Stirring occasionally, cook the beef until it browns, about 5 minutes.

3) Move the beef to one side of the pan, and add the stock and the sour cream to the other side of the pan. With a whisk, combine the stock and sour cream in the pan so that no clumps remain. Evenly distribute the beef throughout the pan and continue to cook, stirring occasionally, for 10 to 15 minutes, or until the sauce boils around the edges and thickens.

4) To serve, divide the noodles among four bowls or onto plates with a lip (to catch the delicious sauce) and top with the beef and sauce (see notes).

NOTES :
I serve this dish over egg noodles but it is also good served over rice or any pasta you have on hand. This dish is great served with a little sprinkling of Parmesan cheese over it.
