Vegetable wedges with paprika and sweetcorn recipe

Makes approx : 18 Piece

Preparation time : 25 minutes (plus rising and baking time)

Ingredients : 
1)  250 g plain flour
2)  1/2 yeast cube
3)  1/2 tsp sugar
4)  salt
5)  pepper
6)  3 tbsp sunflower oil
7)  2 garlic cloves
8)  3 eggs
9)  100 g freshly grated mountain cheese
10)  200 g crème fraîche
11)  2 tbsp freshly chopped mixed herbs
12)  1 red pepper
13)  1 courgette
14)  150 g sweetcorn (tinned)
15)  fat for greasing

Preparation Method :
1) Mix the flour with the yeast, sugar and 3 tablespoons of lukewarm water, cover and allow to rise for 15 minutes. Add two teaspoons of salt, 1 pinch of pepper, a little oil and 70 ml lukewarm water and make a smooth dough. Allow to rise for 20 minutes. Roll out the dough, halve and allow to rise for a further 20 minutes on greased baking sheets.

2) Peel and crush the garlic cloves. Mix the eggs with the garlic, cheese, crème fraîche and herbs, and season to taste with salt and pepper.

3) Pre-heat the oven to 200 °C (Gas Mark 6, fan oven 180 °C). Wash and de-seed the peppers, and cut into thin strips. Wash the courgette and dice finely. Drain the sweetcorn. Mix the vegetables and put equal quantities on the two dough bases. Pour the cheese mixture on top.

4) Bake for approx. 55 minutes. Cut the flan into 9 squares and then cut these in half on the diagonal. Serve warm or cold.
