Vegetable and potato bake recipe

Serves : servings 

Preparation time : 20 minutes (plus baking time)

Ingredients : 
1)  300 g tomatoes
2)  2 green peppers
3)  2 aubergines
4)  500 g potatoes
5)  250 g mozzarella
6)  200 ml dry white wine
7)  200 ml vegetable stock
8)  salt
9)  pepper
10)  2 tbsp breadcrumbs
11)  freshly chopped thyme
12)  1 bunch basil
13)  5 tbsp olive oil for the dish

Preparation Method :
1) Wash the tomatoes, peppers and aubergines, and cut into thin slices or strips as appropriate. Peel the potatoes and slice.

2) Grease an oven-proof dish with olive oil. Layer the vegetables in it.

3) Slice the mozzarella and arrange on top. Pour on the wine and stock. Season with salt and pepper. Mix the breadcrumbs with the thyme and sprinkle over the dish. Bake in the oven at 200°C (Gas Mark 6, fan oven 180°C) for about 1 hour. Wash the basil leaves, shred and sprinkle over the bake before serving.
