Rice noodles with broccoli and eggs recipe

Serves : servings 

Preparation time : 15 minutes (plus soaking and frying time)

Ingredients : 
1)  300 g rice noodles
2)  250 g Thai broccoli leaves or pak choi
3)  250 g tofu
4)  4 garlic cloves
5)  5 tbsp oil
6)  1 tbsp pickled yellow beans
7)  4 eggs
8)  2 tbsp dark soy sauce
9)  3 tbsp light soy sauce
10)  1 tbsp sugar
11)  white pepper

Preparation Method :
1) Soak the rice noodles in warm water for approx. 10 minutes, then drain in a sieve and divide into pieces 10 cm long. Wash and clean the Thai broccoli leaves or pak choi and shred into strips approx. 4 cm long and 2 cm wide.

2) Pat the tofu dry and cut into strips. Peel the garlic and chop finely. Heat the oil in a wok or frying pan and sauté the garlic for approx. 1 minute until golden brown. Add the pickled beans and tofu. Mix everything together, cook for approx. 2 minutes, then carefully fold the rice noodles into the mixture. Deglaze with approx. 50 ml water, then add the broccoli (or pak choi).

3) Beat the eggs in a bowl and stir into the noodle mixture. Season to taste with soy sauce, sugar and pepper, and serve immediately.
