Mixed raita Recipe

Serves : servings 

Ingredients : 
- THICK GREEK YOGURT 200ml (7fl oz)

- RED ONION 1 small, finely chopped

- CUCUMBER 7.5–10cm (3–4in) piece, finely diced or grated

- TOMATO 1, deseeded and finely chopped

- FRESH GREEN CHILLI 1 finger-type, finely chopped

- FRESH MINT 8–10 leaves, finely chopped

- RED CHILLI POWDER ½ teaspoon

- CUMIN SEEDS 1 teaspoon, toasted and finely crushed

- LIME JUICE to taste

- SALT

- CHOPPED FRESH CORIANDER 1 tablespoon to garnish (optional)

Preparation Method :
- Place the yogurt in a deep bowl and whisk well. Add all the ingredients, except the lime juice and salt, and mix them in thoroughly. Taste and season with salt and a little lime juice.

- Transfer to a bowl and garnish with the coriander, if you like.
