Falafel recipe

Serves : servings 

Preparation time : 15 minutes (plus soaking, resting and deepfrying time)

Ingredients : 
1)  4 garlic cloves
2)  4 onions
3)  400 g cooked chick peas
4)  1 bunch freshly chopped flat parsley
5)  1 bunch freshly chopped coriander
6)  4 tbsp plain flour
7)  salt
8)  pepper
9)  1 tsp sweet paprika powder
10)  1 tsp ground cumin
11)  2 litres vegetable oil

Preparation Method :
1) Peel and chop the onions and garlic. Purée with the cooked drained chick peas and herbs. Mix in the flour and seasoning, and knead into a firm dough. Refrigerate for approx. 1 hour.

2) Make approx. 48 little balls from the dough and deep-fry in hot oil for approx. 3 minutes. Drain on kitchen paper.
