Radish parcels with spring onions recipe

Makes : 16 pieces

Preparation time : 30 minutes (plus time for resting, steeping and frying)

Ingredients : 
1)  400 g plain flour
2)  1 egg
3)  600 g mooli radish
4)  salt
5)  3 tbsp sesame oil
6)  1 tsp sugar
7)  2 spring onions
8)  pepper
9)  4 tbsp soy sauce
10)  1 1/2 tbsp rice vinegar
11)  1 tsp chilli sauce
12)  1 litre groundnut oil for deep frying
13)  flour for the work surface

Preparation Method :
1) Mix the flour with 180 ml warm water, add the egg and knead into a smooth dough. Put into a bowl, cover with a damp cloth and allow to rest for half an hour.

2) Peel the radish and grate finely. Mix with 1/2 teaspoon of salt and allow to draw for 10 minutes. Then pour off any liquid and squeeze the grated radish well. Put in a bowl and mix with 2 tablespoons of sesame oil and the sugar.

3) Wash the spring onions and chop very finely. Mix with the radish and season to taste with pepper and salt, as required.

4) Knead the dough once more and then roll out on a floured surface. Using a glass, cut out 16 circles 10 cm in diameter.

5) Put the radish mixture on one side of each circle, fold the other half over and press the edges together well.

6) Create a dip from the remaining sesame oil, soy sauce, vinegar and chilli sauce. Heat the oil in a wok or a deep frying pan on a medium heat. Put the radish parcels in and fry on both sides until golden brown. Allow to drain and serve with the dip.
